Rosewood has a “dry wood feeling”, the grain and color than often don’t match the guitar design. Ebony is smoother , “wet wood feeling” with more warm in touch if I can say that about wood.
Indian rosewood can look good provided it's properly fine sanded and looked after. Ebony looks and feels great but moves, shrinks and cracks easily. Stripey ebony tends to be more stable and looks cool imho. There's some ebony from New Guinea which is very nice stuff.
Phenolic is solid, stable stuff and looks great. I was going to make some phenolic fretboards for my next guitars but I've read that the dust may be carsenogenic! I'll be looking into that more before working with phenolic.
I'm wondering if it's rosewoods tendency to be very open pored which you guys don't like? Obviously it's boring as bat shit due to overuse, but so is flame maple these days.
